Pumpkin Pancakes

What do you get when you divide the circumference of a jack-o-lantern by its diameter?

Pumpkin pi pancakes!!

Since Halloween is over, were you wishing your pumpkin could turn into Cinderella’s magic coach? Don’t worry, you can now have higher aspirations for your pumpkin—pumpkin pancakes! So wave that magic spatula-wand and even the prince will be jealous.

Pumpkin Pi Pancakes

½ cup mashed pumpkin

4 Tbsp water (more or less, depending on how thin you like your pancakes)

1 cup GF flour

½ tsp cinnamon

¼ tsp baking soda

½ tsp baking powder

In a mixing bowl, stir together all of the ingredients. Makes 2 medium-large pumpkin pancakes.

They’re great by themselves, or with maple syrup. These pancakes are perfect for a chilly November morning.
