Butternut Bars

If you’ve read The Hobbit then you know dragons are obsessed with hoarding gold. So sharpen your sword and polish your armor, because Smaug is coming.

The rich golden color of these butternut ingots are sure to attract every dragon in town. You don’t need a smithy to forge this treasure for your taste buds.

Even if you avoid the dragons, these delicious butternut bars are sure to attract hungry hobbits. You ought to have a riddle ready for when they come knocking.

Bilbo’s riddle: “A box without hinges, key, or lid; Yet golden treasure inside is hid.”

Answer: Eggs. Butternut Squash!

Butternut Bars

1 cup (heaped) butternut squash

½ cup water

2 cups GF flour

¼ tsp baking soda

½ tsp baking powder

1 tsp cinnamon

[I usually halve one butternut squash lengthwise; then roast it in the oven. I scoop the squash out of the rind in order to get the one cup used in this recipe.]

Preheat oven to 350°F.

In a large mixing bowl, mix together the squash and water. Stir in the other ingredients until smooth. Pour batter into an 8×8-inch pan, and then bake for about 30 minutes.

Be sure to cut a lot of bars and hoard them all. Mine seem to keep mysteriously disappearing…

Bitten Butternut Bar

I wonder why? Isn’t biting the best way to identify real gold?
