Pairing ice cream with a hot summer day is always a great combination. Take it from Olaf, the snowman in Disney’s Frozen:

Whoever first put chocolate and cherries together should be commemorated. This ingenious pairing is sweet and enticing…and it’s never going out of style.
Cherry Chocolate Chunk Ice Cream
1.5 cups rice milk
2 Tbsp sugar
4-6 cherries, diced small
2 heaping Tbsp chocolate chunks
Optional: add 1 Tbsp dried cherries
For this recipe, I used an ice cream maker. Freeze the bowl of your ice cream maker a day or two ahead of time.
Stir together the rice milk, sugar, and diced cherries (these should be small and almost mashed). You can save a whole cherry to put on top at the end. Pour the mixed ingredients into the frozen bowl of an ice cream maker, operating it as instructed. About 5 to 10 minutes before the ice cream maker is done, add the chocolate chunks and optional dried cherries.
Serve right away or store in the freezer.
This cherry-chocolate combo is a great way to cool off when it’s hot.
